The red card was terribly harsh. The ball hit below his arm on his chest. Even if he handled the ball, it should have been a yellow only.

The ball hit Bunn's right arm, it was rightly red because Fletcher would have had a clear goal scoring opportunity. As for the pen, having seen it again at HT, you are right, Fletcher was offside and there should not have been a pen.

Intention doesn't matter in this case. There was no Norwich defenders behind him when he handled and therefor the ball was definitely going to Fletcher . Bunn illegally denied a clear goal-scoring opportunity, whether or not intentionally is irrelevant.
