Peruse the collection above and hit the links below to cop. Following on from last week’s reveal, it’s been confirmed that more Wales Bonner x adidas styles are on the way. A cream and brown-toned Samba Millennium will be joined by a blue and brown version, which sees the designer re-employ the pony hair finish from her last Samba colab. Also joining the collection are more colour-ups of the SL76, which is expected to drop in cornflower blue and yellow finishes, with the latter rivalling the Onitsuka Tiger Mexico 66. Wales Bonner brings football tradition to the sneaker, as the supple cream upper features stitching and ribbing similarly seen on classic adidas Football boots such as the Copa Mundial. The medial and lateral Three Stripes hide blend up against the upper as pebbled brown leather makes up the back half of the sneaker and tongue. Tony Turnbull on the latest foodie trend https://www.thetimes.co.uk/article/this-summers-hottest-food-its-all-gone-greek-8308xnrlw I’d hesitate to call it new — how can we say that about the cuisine of one of the oldest civilisations? — but Greek cooking is undoubtedly enjoying a moment in the sun. A rush of restaurant openings are putting kebabs, kleftiko and baklava at the heart of their offerings, updating the classics for well-travelled diners whose perception of Greek food is shaped more by visits to the islands of Mykonos and Stifnos than by reruns of Zorba the Greek. There’s the Counter Soho, a “contemporary grill bar” that opened this week off Carnaby Street in London, where Kemal Demirasal is inspired by the Aegean coast where he grew up and is knocking out plates of grilled cheese, octopus and red prawns. At the “refined tavern” Gaia, on Dover Street in Mayfair, you can pick up a £24 moussaka and lamb cutlets with pitta and tzatziki for £48. Hovarda, another Aegean-inspired bar and restaurant in Soho, where you can sip on pine-infused mastika liqueur martinis to live music, will soon open a site in Canary Wharf, while at gloriously over-the-top Fenix in Manchester staff dressed as Greek goddesses bring surprisingly good food to the sceney crowd. The restaurant that has drawn the most praise, though, is Oma, in Borough Market, London, from the Bajan restaurateur David Carter, of Smokestak and Manteca fame. The Times restaurant reviewer Giles Coren was swept off his feet by dishes such as labneh with salt cod and a “stop-all-the-clocks” deconstructed spanakopita. “I ate so well it damn near blew my head off,” he raved. • Giles Coren’s Oma review: ‘A slam-dunk for best restaurant of the year so far’ Carter says the starting point was his first visit to the Greek islands, in 2022. He and his girlfriend started in Crete, then island-hopped to Athens via Santorini, Milos and Sifnos. He ate in two revelatory restaurants: Costas Caferion in Maza, Crete — “It’s just perfect. No menu. They ask you how hungry you are, if you eat everything, and then it just arrives” — and cliffside Cantina on Sifnos: “Hands down the most idyllic restaurant I’ve ever been to, and a huge focus on sustainable, seasonal cooking. “What I really loved was the design, the textures, the feel of the places, and the simplicity of the food. I got a real itch for it and have been back eight times.” When the two-storey restaurant site in Borough came up he decided to open Agora, a casual taverna, on the ground floor, focusing on grilled meats and mezze, and the smarter, fish-leaning restaurant Oma upstairs, both with a rugged ochre aesthetic. “Upstairs is more aspirational, whereas downstairs there’s no booking,” Carter says. “What I love is you can go on your own, which is hard in London, and try lots of dishes for £4 to £5.” What makes Oma and the rest of the new wave of Greek restaurants stand out from those we are familiar with in this country is that they take in the food of the whole Aegean, which includes the Turkish coast, so there is incredible variety. “I went to Istanbul a couple of times for research, and our head baker is Turkish, so through a combination of travel, research and development we’ve ended up with I suppose a Mediterranean menu with an emphasis on the Greek islands,” Carter says. That’s plain to see in dishes such as the standout Greek salad, based on a Cretan dakos salad, with rusks and galomizithra, a soft creamy goat’s cheese, in place of feta; the grilled octopus and squid; the lamb belly with hummus. And he’s happy to bring in other terrains, such as with bream ceviche in green tomato and apple aguachile (perhaps down to the fact that his executive chef Jorge Paredes is from Ecuador), and labneh with salt cod and XO sauce. Then there is that spanakopita. “I fell in love with malawach, a Yemeni flatbread similar to the rotis that I grew up with in the Caribbean,” Carter says. “I was playing with versions of it and wanted to pair it with something cheaper than traditional lamb shank, and so came the deconstructed spanakopita, where you dip the bread into melted feta and graviera cheeses with spinach and herbs. “Perhaps it’s selfish, but I just make restaurants that I want to eat at.” Plenty of us want to eat this kind of food at home too. Georgina Hayden, a north London-born Greek Cypriot, used to develop recipes with Jamie Oliver, and has long championed the region’s food. She has just written her fourth cookbook, Greekish, and puts our interest down to a new understanding of how elegant and varied Greek food can be. “In the Seventies and Eighties Spain and Greece were known through package holidays, whereas somewhere like Italy was more middle class, so its food was put on a pedestal,” she suggests. “We thought we knew Greek food, but it was a very anglicised understanding, all kebabs and grilled meat. Now we are moving away from that.” In Greece they eat a lot of fish, beans, pulses and even pasta. “The Ionian islands are much closer to Italy, and there is a Venetian influence on Corfu and Kefalonia. Cyprus, which is a separate country but part of the same culinary family, is closer to Turkey and the Middle East, so there is a lot of cumin and coriander. It makes Greece a good gateway to more exotic flavours.” Having written three authentically Greek recipe books, Hayden is now happy to mix things up a bit, hence the “ish” of her book’s title. She finds that making dishes a bit spanakopita-ish is a good way of getting her children to eat vegetables. “And while I love to make pastitsio [a Greek pasta bake with ground beef], for example, I’ve got two kids and am busy so I make my version of things — quicker and easier but with the same flavours.” • Georgina Hayden: How to fast the Greek way (we’ve done it since 5BC) The beauty of Greek food, she says, is its simplicity. Lemon, olive oil, salt and oregano are the cornerstones of Greek cooking — add them to any protein, be it cheese, fish or meat, and you are halfway there. “It’s very celebratory of its ingredients,” Hayden says. So what are her tricks to make Greek food shine on a cloudy day in Britain? If you want to make Greek salad, start with the best tomatoes you can, and don’t attempt to make it out of season. Her tip is to roughly chop the tomatoes, place them in a colander in the sink and sprinkle with salt to draw out excess water and concentrate the flavour. As for the feta, anything produced in Greece is going to be best. Of the widely available brands, Odysea is her favourite. “Their taramasalata is also superb. It’s so addictive I had to stop buying it as I was eating the whole tub.” Halloumi too is best when it has been made in Greece, and never with cow’s milk. “We eat it very thinly sliced with watermelon on a hot day — the salty-sweet combination is so refreshing.” To convert refuseniks she suggests scoring the cheese with criss-crosses, topping with apricots or figs, oregano and a drizzle of olive oil, then grilling it for 8-10 minutes before finishing with a little honey. “That’s lovely as a mezze. Or you can make my favourite thing in the world: a grilled halloumi sandwich with apricot jam. Divine.” Hayden recommends making your own hummus because the supermarket ones tend to be too grainy. “It’s also much cheaper. Use jarred chickpeas, as the way they are processed makes them creamier than tinned. You can go high end with jars of Bold Beans or Brindisa beans, but I use 69p jars from my local Turkish supermarket. Get your tahini from a Middle Eastern shop too, ideally a Lebanese one, and it will be much cheaper than in the supermarket. Finally, add the liquid from the [chickpea] jar and only a tiny amount of olive oil, and it will whizz into a nice moussey dip.” Her favourite dinner party dish is her version of youvetsi, a slow-cooked sticky beef casserole with orzo and tomatoes. “It’s perfect for entertaining because you put it in the oven and forget about it. I serve it with grated halloumi, which we use like parmesan. And always with a salad on the side with a very vinegary dressing that cuts through the richness of the meat.” Finally, a tip from her vegetarian father. “His favourite way to eat olives is to take those black wrinkled ones, put them on a skewer and grill them on a barbecue, then press them into a piece of toast with a little oil. They become meaty and intensely flavoured.” Oma, 3 Bedale Street, London SE1 9AL, oma.london Georgina Hayden’s recipes Spiced lamb chops with hummus Serves 4 Ingredients • 8 lamb chops • 2 garlic cloves • 1 tsp ground cumin • 1 tsp ground coriander • Olive oil • 2 lemons • 2 shallots • 2 green chillies • A few sprigs of mint • 30g pistachios or almonds • 200g hummus, shop-bought or homemade (recipe below) • Sea salt and freshly ground black pepper Method 1. Place the lamb chops in a dish and crush in the garlic. Season well, then add the cumin and coriander. Pour in enough olive oil to coat, and squeeze in the juice of one lemon. Massage the flavours into the chops, then cover and leave to marinate in the fridge for as long as you can, bringing it out 20 min before you want to cook. If you don’t have much time, leave to one side on the kitchen counter for at least 5 min. 2. While the lamb is marinating, peel and finely slice the shallots. Place in a bowl with the juice of the second lemon and a good pinch of salt. Halve, deseed and finely slice the chillies. Toss through the lemony shallots. Pick the mint leaves and roughly chop. Finely chop the pistachios or almonds and set aside. Spoon the hummus onto a serving plate. 3. Place a griddle pan on a high heat. Grill the lamb chops for about 4 min on each side — this will give you just-blushing meat. You can cook them for less or more time depending on your taste. I like to finish by propping them up on the fatty side to get it crisp (this was always my mum’s favourite bit). You don’t want to crowd the pan, so you may need to do this in two batches. If so, rest the cooked chops in a low-temperature oven while you cook the others. As soon as all the chops are ready place them on top of the hummus. Toss the mint through the shallot mixture and scatter the nuts over the top. Hummus Serves 6 Ingredients • 400g jar or tin of chickpeas • 3 tbsp tahini • Juice of ½ lemon • 1 garlic clove • Olive oil, for drizzling • Sea salt and freshly ground black pepper Method 1. Drain the chickpeas, reserving the liquid, and place them in a food processor. Add the tahini and lemon juice. Peel and roughly chop the garlic and add to the food processor with 3 tablespoons of the chickpea liquid. 2. Blitz until very smooth, adding more of the liquid as needed until you have a mousse-like texture. Season to taste — you will need to be generous. Finish with a good drizzle of olive oil. Filo-wrapped feta with spiced honey Serves 4 Ingredients • 200g block of feta • 1 sheet of filo pastry • Olive or vegetable oil • 1 garlic clove • 2 tbsp honey • 1 tsp wine vinegar, red or white • ½ tsp Aleppo pepper or ¼ tsp dried red chilli flakes • 5 sprigs of thyme • Sea salt and freshly ground black pepper Method 1. Wrap the feta in kitchen roll to dry it out a little, patting away the excess moisture. Lay out the sheet of filo, brush with olive oil and season well. Put the feta on the filo’s short edge and roll it up, tucking in the edges before the last fold. Crush the garlic with the side of a knife and place in a bowl with the honey, vinegar and 1 tablespoon of water. Add half the Aleppo pepper and half the thyme leaves. 2. Drizzle 2 tablespoons of oil into a small frying pan and fry the parcel on a medium heat until golden-brown and crisp. You’ll need to fry it for 2-3 min on each side to get an even colour all over. 3. Pour the honey mixture into the pan — it will bubble rapidly — and reduce the heat. Working quickly, spoon the liquid over the top of the parcel until it’s all sticky, then remove from the heat. Sprinkle the remaining thyme leaves and Aleppo pepper over the top and serve. Sticky date, yoghurt and tahini aubergine salad Serves 4 Ingredients • 3 aubergines • 4 tbsp olive oil • 150g Greek yoghurt or a plant-based alternative • 1 garlic clove • 1 lemon • ½ bunch of mint • ½ bunch of coriander • 3 tbsp tahini • 3 tbsp date syrup or molasses • 1 tbsp extra virgin olive oil • 125g medjool dates • ½ tsp ground coriander • ¼ tsp ground cumin • ½ tsp Aleppo pepper or ¼ teaspoon dried red chilli flakes, plus extra for sprinkling • Sea salt and freshly ground black pepper Method 1. Preheat the oven to 200C fan/gas 7. Trim the aubergines and use a peeler to remove most of the skin in strips. Slice them into 3cm-thick rounds and place in a large bowl. Drizzle with the olive oil, season generously with sea salt and black pepper and massage in. Lay the aubergine slices in a roasting tray (or two — you don’t want the slices to overlap) and roast for 30 min. 2. Spoon the yoghurt into a mixing bowl and finely grate in the garlic. Season generously, then squeeze in the juice of half the lemon. Finely chop half the mint and coriander leaves and stir into the yoghurt. In another bowl, whisk the tahini with 3 tablespoons of cold water, the remaining lemon juice, 1 tablespoon of date syrup and the olive oil, and season well. Remove the stones from the dates and roughly chop the flesh. 3. After the aubergine has been in the oven for 30 min, remove and drizzle with the remaining date syrup. Sprinkle over the ground coriander, ground cumin and half the Aleppo pepper. Add the chopped dates to the tray, carefully toss everything together and return to the oven for 5–8 min, until sticky and caramelised. Spoon the yoghurt over a serving platter and top with the sticky aubergines and dates. Drizzle over the tahini dressing, and scatter over the remaining herbs and Aleppo pepper just before serving. The venture capital-backed art collective have linked up with the German-based techwear brand on the Super Normal sneaker, which sneakerheads will recognise as their warped and wavy AF1-inspired silhouette. While the Super Normal sneaker provides the perfect canvas underneath, it’s fair to say that the shoes have well and truly been given the ACRONYM treatment. Making use of the layered uppers, ACRONYM have placed vivid pools of green at the toebox and ankle and added slash detailing at the side walls where they’ve embedded branded zippers. The pairs have also been fitted with shapeable metal backing, which allows the wearer to get creative with the silhouette’s structure, extended tongues and metal dubraes that take on a wavy shape. Warped MSCHF branding hits the midsole heels and tongue tabs, and the pairs come coated with a textured overprint for an additional point of detail. Fans of ACRONYM will no doubt recognise some signature details here, as the brand employed the same zip details and vivid green on their previous Nike colabs.
